生滚粥之皮蛋瘦肉粥
生滚粥是广东传统粥之一,用预先煮好的粥底,加新鲜肉料滚熟,一锅美味的粥就出来了。粥底一般用白粥,也有些加了些瑶柱或鱼干去做的,要把米煮的不见米,才够顺滑。肉料则丰富了,基本上任何一种都可以,先用油、盐、糖、酒、酱油腌制,再加姜丝拌匀。做的时候用小锅把白粥烧开,下肉料,烧开后一会儿就行了。传统的有皮蛋瘦肉粥,肉丸粥,鱼片粥,及第粥,可以是一种材料,也可以是两至三种材料一起煮,只消片刻,一锅鲜美的生滚粥就能呈现在眼前了。
        今天就用五常稻花香米做个经典的皮蛋瘦肉粥,美味。

Steps to make 生滚粥之皮蛋瘦肉粥

  • 1.五常稻花香粥米
  • 2.准备好瘦肉、皮蛋等材料。
  • 3.将粥米清洗一下,入砂锅加水烧开,文火慢慢熬粥。
  • 4.瘦肉切片,用盐、生抽抓匀,再用姜丝,花生油拌匀腌制。
  • 5.皮蛋去壳压碎待用。
  • 6.待米都煮开花,开始粘稠,也就是粥底可以的时候,开大火,将肉片下锅搅匀。
  • 7.粥再滚起来的时候,肉片基本已经可以了,将皮蛋入锅搅匀。
  • 8.加入葱花,粥就煮好了。
  • 9.美味的皮蛋瘦肉粥上桌了,配上胡椒粉,喜欢的可以往自己的碗里加就OK了。
