大煮干丝,

大煮干丝又称鸡汁煮干丝,是一道既清爽,又有营养的佳肴,其风味之美,历来被推为席上美馔,是淮阳菜系中的看家菜。原料主要为淮扬方干,刀工要求极为精细,多种佐料的鲜香味经过烹调,复合到豆腐干丝里,吃起来爽口开胃,异常珍美,百食不厌

我这道大煮干丝,是根据自己的口味来做的,是用我们当地的豆腐皮(就是千张)来做的,我的刀工并不好,但是我也切的粗细均匀了,味道丝丝入味。鸡汤鲜美,加上用虾皮和北极虾吊了鲜味。味道鲜美,而且虽然用了点玉米油炒至,但是一点都没有感到油腻,反而把虾虾皮豆皮的味道激发的更加鲜美,香菜叶也是点睛的,融合这个味道我感觉会更好。如果再加点小油菜什么的在里面也很美味的,家里正好没有了,我就没有放

    • 1.首先准备原料,豆腐皮,香菜,虾皮,北极虾
    • 2.把豆腐皮洗净,叠起来,切成粗细均匀的细条,我切的这样子啦
    • 3.切好后抖开,备用,其实不用一定要切的特别细,我觉得粗细均匀就好。我们又不是顶级的大厨,我们只是普通的煮妇,怎么做怎么吃呗
    • 4.然后准备好鸡汤,没有鸡汤可以用一个浓汤宝加开水化开,或者用那种盒装的鸡汤也可以
    • 5.然后准备好蒜,姜片
    • 6.锅中放适量玉米油(用没有味道的油才不会喧宾夺主的夺掉这汤的鲜味),油热放入姜片和蒜片炒出香味
    • 7.然后放入北极虾和虾皮,炒出香味,可以适当多炒一会
    • 8.然后加入豆腐丝炒匀
    • 9.炒匀后就倒入适量鸡汤,煮
    • 10.煮到豆腐丝熟了,加适量盐,香油,鸡汁调味,加入香菜搅匀出锅装盘即可
