一步一步学做蛋挞---葡式蛋挞
葡式蛋挞看起来好像很难··其实也不难,就是要反复做动作。很多筒子都说很难做,我就来挑战一下,其实也不难啊,就是制作的时候常常要放冰箱冷藏,害我上楼下楼跑来跑去。晕····
         我这个很详细版,大家也来学习吧。看见筒子们网购蛋挞皮,其实我也很想网购的,可是好贵哦,就没舍得买了,就买一些材料自己动手做左看。一次就成功罗,挞皮超酥的,好好吃,烤的时候很香的奶油味。现在懂为啥葡式蛋挞这么贵啊,材料贵呢。不过很值得啊。

  • 低筋面粉130克
  • 高筋面粉20克
  • 黄油25克
  • 酥油100克
  • 80ml
  • 淡奶油120ml
  • 牛奶80ml
  • 蛋黄2个
  • 低筋面粉10克
  • 白砂糖30克
  • 炼乳8克

Steps to make 一步一步学做蛋挞---葡式蛋挞

  • 1.低筋面粉130克、高筋面粉20克、黄油25克、水80克、酥油100克。
  • 2.黄油放在面粉中间,用手画圆将黄油搓软。
  • 3.加入清水混合揉成团,手掌根部用力反复搓擦面团数次。
  • 4.揉好的面团裹保鲜膜入冰箱冷藏半小时;
  • 5.把酥油放在保鲜膜上用面棍捶软后擀成薄片冷藏备用。
  • 6.面团取出擀成长方形面片(中部略厚)
  • 7.将酥油放在面片中部。
  • 8.将两边面片向中部折叠。
  • 9.上下两边折叠封死;
  • 10.将面片擀开。
  • 11.擀好后像叠被子一样将面皮叠好四折后入冰箱冷藏30分钟
  • 12.从冰箱拿出擀开叠好四折后入冰箱冷藏30分钟。
  • 13.再从冰箱拿出,擀开。
  • 14.卷成卷入冷藏备用。
  • 15.淡奶油120ML、牛奶80ML、白砂糖30克、蛋黄2个、低筋面粉10克、炼乳8克。
  • 16.淡奶油,牛奶,炼乳,糖混合后隔水加热至糖融化取出晾凉。
  • 17.倒入蛋黄液中拌匀。
  • 18.筛入面粉拌匀。
  • 19.过筛,蛋挞水就做好了。
  • 20.面卷分成等分。
  • 21.底部蘸少许干粉。
  • 22.放入模具从中部用双手拇指向四周推开,注意塔皮要薄厚均匀。
  • 23.做好的蛋挞皮可以放入冰箱冷藏20分钟定型,也可以不冷藏。
  • 24.倒入塔水7分满左右。
  • 25.放入预热好的烤箱210度,25分钟,上下火,中层。
