  • 1.准备1个包菜(卷心菜)。将包菜(卷心菜)最外面一层剥掉丢弃
  • 2.一片一片的包菜(卷心菜)剥好后,用清水洗净。再用手将其撕成小片备用
  • 3.包菜洗净,大蒜剥好拍碎。生姜切片。花椒和辣椒备用
  • 4.锅中倒进2勺油,大火烧至7、8层熟;放花椒粒和干辣椒爆香
  • 5.放进大蒜、生姜大火爆一会
  • 6.下锅翻炒包菜时旺火爆炒,炒出来的菜叶又脆又香。手撕包菜要用快火爆炒,快速起锅,时间久了营养价值就丢失了
  • 7.起锅前添加1次醋增鲜提香,增加菜品的酸辣口感。往锅中添加醋的时候,不要直接倒在菜叶上,将醋沿着锅边倒,淋在高温的锅壁上,醋味预热一下就呛出来了;而且香味的散发也均匀了
  • 8.最后放进1勺盐、1勺鸡精、半勺白糖即可出锅。这道手撕包菜虽然不起眼;可是颜色鲜亮,爽脆微酸,清甜鲜辣,在视觉和味觉上激发食欲。常常成了节日餐桌上一盘不够还要再添一盘的清新素菜!
