    Steps to make 武汉豆皮

    • 1.将糯米洗净浸泡1夜。
    • 2.蒸锅上铺上纱布,倒入浸泡好的糯米,蒸25分钟,中间在米饭上撒点水。
    • 3.将香菇、胡萝卜、榨菜、青豆、肉切成小丁。
    • 4.锅里放适量油,先将下肉丁翻炒。
    • 5.等肉转色后,加入胡萝卜,青豆,榨菜跟香菇丁再翻炒,最后加入酱油调味,关火即可。
    • 6.将蒸熟的糯米饭分成2份,1份加点油,盐拌匀。
    • 7.1份和刚炒好的浇头拌匀。
    • 8.准备面粉和粘米粉,2个鸡蛋。
    • 9.将面粉和粘米粉混合,加凉水拌成比较稀的面糊,鸡蛋加点盐打成蛋液。
    • 10.饼铛打开开关,刷上油,倒入适量面糊,推平。
    • 11.等面糊凝固后,倒入蛋液。
    • 12.等鸡蛋液呈半凝固状时,给它翻个身,这时关闭开关。
    • 13.均匀地铺上糯米饭。
    • 14.再铺上拌好的浇头,用铲子使劲压实,打开饼铛上下开关,盖上盖子焙2分钟即可。
    • 15.切块装盘。
