Steps to make 丝瓜煮蛏子

  • 1. 短丝瓜2根,刨去外皮,切去头尾,从中间切断,再切成丝瓜条,装盘备用。
  • 2.蛏子适量,加入较重的盐,静至1小时,让蛏子吐出泥沙,1小时后,将蛏子表面搓洗干净。
  • 3.锅烧热,去适量猪油,化开后下入姜丝爆香,下入丝瓜,翻炒均匀,多次少量淋入高汤或水,引出丝瓜的水份,将丝瓜炒软。
  • 4. 丝瓜炒软后下入蛏子,淋入适量高汤,翻炒均匀,再加入适量的盐,翻炒至蛏子炸口。蛏子炸口后,加入大红椒丝和鸡精,翻炒均匀,即可起锅。
