无糖版红烧鸭肉
鸭肉,是家庭中的主要肉食之一,可用于各种各样的烹饪,因此它被视为各种美味名菜的原料。鸭肉的脂肪酸熔点低易于消化,蛋白质含量高,且所含维生素B和E较其他肉类高。相比鸡肉而言,鸭肉的口感更加紧致香酥,有人并不喜欢红烧类中偏甜的口感,这道红烧鸭肉不加糖省略炒糖色这一步,而用郫县豆瓣酱炒出红油代替,做出的成品色泽鲜亮却不失美味......

Steps to make 无糖版红烧鸭肉

  • 1.鲜鸭半只洗净后斩块。
  • 2.将鸭肉下锅加一勺料酒,烧开后煮一分钟煮出血沫。
  • 3.焯过水的鸭肉用清水冲两三遍直至干净,沥干水份盛出备用。
  • 4.沥干水份的鸭肉放入大碗,加点胡椒粉、五香粉、生抽抓匀腌制15分钟。
  • 5.姜切片,八角和桂皮湿一下水,干辣椒湿水后切段。
  • 6.锅内热油后下鸭肉油炸。
  • 7.炸至如图所示呈黄色时捞出备用。
  • 8.锅内留点底油,加一勺豆瓣酱小火炒香出红油。
  • 9.再下姜片、八角、桂皮、干辣椒炒出香味。
  • 10.将鸭肉倒入锅内,加适量清水,两勺生抽、一勺老抽,汤汁烧开后上盖转小火焖15分钟。
  • 11.最后大火收汁时调入一点盐和鸡粉。
  • 12.成品图。
