【抻面法】瓜丝麦饼
在各种馅料的麦饼中,我最喜欢的是南瓜丝麦饼,薄薄的饼皮包裹着厚厚的南瓜肉馅,吃起来香软可口,但瓜丝水分多,容易破,比较难做。要想做成功,揉面和馅料调配是关键,麦饼的做法也很重要。今天学了种抻面法,可以容纳较多的馅料,饼皮薄而不破,跟大家分享一下,多做就会有经验,关键在于熟能生巧。

    Steps to make 【抻面法】瓜丝麦饼

    • 1.嫩南瓜清洗干净去瓤。
    • 2.适量南瓜擦成丝,加盐搓软出水。
    • 3.挤干水分,挤出的汁水留着和面。
    • 4.面粉中边倒南瓜水边用筷子搅拌,一直搅到没有干面粉的团状为止,放置10分钟之后再次把面团搅光滑,盖保鲜膜饧发两个小时以上。要想麦饼做的好吃不硬,有三个关键点:面团一定要软;饧发的时间要长一些;面团和馅料的软硬要对应。
    • 5.夹心肉末加盐、蚝油先拌匀。
    • 6.小葱切细。
    • 7.南瓜丝,肉末,葱末、蒜泥放在大盆中搅拌好,有经验的人闻一下便能判断咸淡。
    • 8.均匀分成小份,揉圆。
    • 9.饧发好的面团特别的软,要加点干面粉防粘,把面团分成小份。
    • 10.擀成中间厚四周薄的圆片。
    • 11.面片上放上馅料,四周用刀切八等份。
    • 12.饧透的面皮延展性很好,每角小面片边抻边均匀提捏到顶部,两片边缘要交叠不留空隙。
    • 13.封好口,再把封口朝下放置10分钟。
    • 14.先用手轻轻在中间向下按压,边按边往外推,再用麦饼擂(本地一种麦饼专用工具,没有就用饺子棒)不断地变换角度从中间向外“擂”(方言,“滚”的意思),目的是让中间收口的面变薄,把麦饼变得又大又薄,同时使肉馅均匀地分布到边上。手艺娴熟者做的麦饼坯是饼皮擀得很薄而不破损,透过面皮可以看见馅料。
    • 15.平底锅烧热后,倒入少许食用油,将麦饼坯放入,盖上锅盖,中小火烙制,切记火候不能过小,饼在锅中的时间过长,烙出来的馅饼水分会流失,外皮就会变硬。
    • 16.大概焖两三分钟,待饼变色后,刷油翻面再烙两分钟,可以多翻几次。
    • 17.时间不要掐死,主要是观察成熟度,饼面金黄,饼鼓起就是熟了。
    • 18.趁热好吃,鲜嫩多汁的馅儿千万别烫到嘴喔!
