  • 低筋面粉70g
  • 牛奶260g
  • 20g
  • 5g
  • 酵母3g
  • 黄油25g

Steps to make 85%含水量的奶香吐司

  • 1.将除黄油和酵母以外的全部材料放入面包桶中,用筷子搅匀,盖上保鲜膜,静置30分钟左右
  • 2.往静置好的面团中加入酵母,启动面包机的和面程序,开始揉面
  • 3.等面团揉至光滑后,加入室温软化的黄油,继续揉面,待揉至有薄膜状态时关掉电源,进行常温发酵
  • 4.面团发酵结束,取出面团进行排气
  • 5.将面团平均分成4等份,盖上保鲜膜略松驰10分钟左右后;排气整形
  • 6.整形好后二次发酵,发酵至9分满时,刷上蛋液
  • 7.烤箱180度预热,上下火,中下层烤30分钟左右出炉
