莲蓉月饼馅
马上就到中秋节了,今年国庆恰逢中秋佳节,双节同庆,家人团圆,月饼不能少,而中秋月饼好吃又经典的馅料就是莲蓉馅,很多朋友都是网购莲蓉馅回来自己做月饼。其实做莲蓉馅真的很简单,没有难度,所以莲蓉馅料不用买,教你在家自己做,方子和做法都在这里,喜欢的朋友不妨试试,低糖少油香甜不腻,无任何添加剂,好吃放心,健康又安全。

Steps to make 莲蓉月饼馅

  • 1.网购的无心莲子。取250g倒入碗中,加水浸泡至变软(大约三四个小时左右),然后清理一下,很多莲子上都带有莲子皮,有的的莲子还有莲子心,取出莲子心,再用流动的水多清洗几遍。白糖我选用的是白砂糖。
  • 2.清洗干净后倒入锅中,用压力锅会更快一些,我用炒锅煮的。
  • 3.大约半小时就煮好了,煮至一碰就碎即可,留一点汤汁便于打碎。
  • 4.将煮好的莲子放入料理机中,打成细腻的糊状,如果搅拌机搅不动可以适当加点莲子汤或者凉开水,能够让搅拌机启动就可以,不需要加很多水,否则炒制时间会加长。
  • 5.取白砂糖100g,花生油80g,尽量少糖少油哈。花生油可以换成色拉油或者玉米油。
  • 6.打好的莲蓉倒入不粘锅里,一定要用不粘锅哈! 然后开小火慢慢把水分炒干。
  • 7.炒至莲蓉变得黏稠时,加入白砂糖,喜欢的还可以加入适量的麦芽糖,我没加,所以做出来的是白色的。
  • 8.分次加入油,每次都要翻炒至完全吸收后,再次加入油,直至全部加入后,翻炒至完全融合状态。
  • 9.最后炒至黏稠不粘锅,可以抱团,就可以关火了。
  • 10.出锅,冷却后揉一揉,可以根据想做月饼的大小,做成合适的月饼馅。做好的月饼馅暂时不用可以放入冷藏室,若几天不用最好放入冷冻室保存。
