樱桃慕斯蛋糕
记得一首老歌中唱到:“樱桃好吃树难栽,不下苦工花不开......”。
我没种过樱桃树,自然不知道这树难栽与否了,但是樱桃好吃却是不假。今年吃了不少的樱桃,也做了樱桃酱,但樱桃慕斯确实从未做过,这次尝试了一次,也明白了“不下苦工花不开”的道理,功夫不到还得继续修炼啊!虽说造型不是很精致,但味道却是没说的,所以嘛,好吃就是硬道理。

  • 戚风蛋糕2片
  • 淡奶油150ml
  • 白砂糖30g
  • 酸奶150ml
  • 樱桃酱100g
  • 牛奶50g
  • 鱼胶粉10g

Steps to make 樱桃慕斯蛋糕

  • 1.樱桃酱加酸奶入料理机打成泥备用;
  • 2.把鱼胶粉加入牛奶中,牛奶隔水加热,使得鱼胶粉全部融化;
  • 3.将融化的鱼胶粉液倒入樱桃酸奶液中,搅拌均匀;
  • 4.将淡奶油提前打发至七成发备用;
  • 5.把樱桃液导入打发好的淡奶油中拌匀,即成樱桃慕斯液;
  • 6.用慕斯圈刻出一片蛋糕,剪小一圈,放入包好锡纸的慕斯圈。(戚风蛋糕的制作详见日志部分)
  • 7.倒入一半慕斯液;
  • 8.再放入用慕斯圈提前刻好的另一片蛋糕;
  • 9.将樱桃用刀一分为二,去核摆入蛋糕片上,在倒入剩下的慕斯液,放入冰箱冷藏数小时;
  • 10.淡奶油加糖打发后,裱在蛋糕表层,并且摆上洗净的红樱桃即可。
