叉烧月饼
要过中秋节了,每年这个时候都要做很多的月饼。今天做的是叉烧月饼,提前做活动 叉烧肉,搭配的有果仁,是一款非常好吃的肉月饼,虽然是放了很多的肉,但因叉烧本身就是蜜汁口味,所以月饼总体还是甜味的,所以平时不喜欢咸味肉月饼的,也会喜欢这款叉烧月饼。

Details of ingredients

  • 叉烧肉370g
  • 白糖230g
  • 干果仁250g
  • 肥肉丁100g
  • 果脯100g
  • 熟糯米粉320g
  • 糖冬瓜丁200g
  • 花生油65g
  • 80g
  • 鸡精2g
  • 花生油100g
  • 面粉400g
  • 转化糖浆300g
  • 枧水5g

Steps to make 叉烧月饼

  • 1.提前做好的叉烧肉。
  • 2.切碎粒。
  • 3.干果仁总共250克,我用了花生米,核桃仁,芝麻,杏仁和南瓜子仁,各50克,都提前烤熟,用的时候压成碎粒。
  • 4.糖冬瓜丁,蔓越莓和菠萝干都备好。果脯可以根据自己喜好替换,但糖冬瓜丁最好不要换。
  • 5.提前腌好的肥肉定。腌制方法:肥膘切丁,开水煮2分钟捞出控水,先用白酒腌15分钟,然后用白糖腌一周左右就可以用了。腌好的肥肉丁香甜不腻。
  • 6.所有食材放一起。
  • 7.加入白糖,放入糕粉,也就就熟糯米粉,再加一点鸡精,我用的昆布粉,更鲜美健康。
  • 8.拌均匀后加花生油拌均匀。
  • 9.加适量的凉白开加湿,以可以成团。
  • 10.拌到可以成团,放置2小时左右,让糖自然融化。刚开始会比较干,放置后就会更湿润些。
  • 11.转化糖浆,花生油和枧水放入盆里,反复搅拌让它们完全融合成一体。
  • 12.加入面粉和成团,放置1小时以上再用。
  • 13.面团分成25克的剂子,馅分成75-80克的剂子。
  • 14.包好成型,烤前喷水防开裂。
  • 15.烤箱170度上下火入烤箱烤。
  • 16.烤6--7分钟,拿出来刷蛋黄液。
  • 17.然后继续烤15分钟出炉。
  • 18.非常好吃的叉烧月饼。
