咸鲜酥嫩滴——肉馅酿豆腐
看着各位筒子热情高涨地参加美食家主题赛,甚是艳羡,平时下班晚,根本没时间做饭,更别提参与大赛了。有时间就上来看看大家的参赛作品,顺便也学习学习。有段日子没吃豆腐了,碰巧看到以前卖卤水豆腐的摊主在,就买了一块做酿豆腐了,味道咸鲜,外酥里嫩。

    Steps to make 咸鲜酥嫩滴——肉馅酿豆腐

    • 1.事先剁好的猪肉泥放入生抽、盐、油、料酒、葱姜拌匀。
    • 2.把香菇、胡萝卜切成末,放入肉馅中,拌匀。
    • 3.豆腐切成4 厘米见方,2.5 厘米厚的块,挖去豆腐块的中心部分成凹形,不要挖透。
    • 4.把调好的内馅填入豆腐里装满,不必装太多,这样酿豆腐就完成了。
    • 5.锅里烧热油,放入豆腐馅面向下。
    • 6.上色后翻过来再煎另一面。
    • 7.少许油爆香葱花,放入蚝油,加半碗水烧开,下入煎好的豆腐。
    • 8.转小火焖入味,收汁即成。
