Steps to make 京味小吃奶油炸糕

  • 1.准备一干净炒锅,开火,倒入色拉油和水,待烧开,将面粉全部倒入。
  • 2.用筷子不停搅拌,使面粉均匀裹上油和水,此过程是烫面,目的是把面烫熟。
  • 3.关火,将烫熟的面装入干净盆中,趁面的余温还在,打入一枚鸡蛋,并用手将鸡蛋揉入面粉。
  • 4.再打入一枚鸡蛋,同样操作,是鸡蛋和熟面充分融合为一体。
  • 5.再打入一枚鸡蛋,同样操作,使鸡蛋和熟面充分融合为一体。
  • 6.将30g绵白糖全部倒入面盆,用手将糖均匀揉入面中。
  • 7.使两者充分融合。
  • 8.取适量面团,用手握住,借助虎口,挤成球状。

  • 10.另起一干净锅,开火,倒入约500g花生油,待5、6成热,下锅炸。
  • 11.用筷子不停拨动,防止其粘连,同时翻动上下面,使均匀上色。
  • 12.待膨胀浮起,呈金黄色即熟,捞出晾凉。
  • 13.记得还要撒上绵白糖,这才是最正宗的吃法。金灿灿的奶油炸糕在白糖的点缀下更诱人了吧!
