蔓越莓小餐包
酸酸甜甜的蔓越莓干放在面包里,真是百吃不厌。今天我又做了这一经典美味小面包,特意将蔓越莓用量加大。很快就吃没了!

  • 焙食尚原味面包粉200克
  • 焙食尚原味蛋糕粉50克
  • 酵母3克
  • 牛奶170克
  • 白糖20克
  • 黄油20克
  • 蔓越莓干120克
  • 蛋液少许(表面刷)

Steps to make 蔓越莓小餐包

  • 1.材料除黄油和蔓越干外,全部入面包桶中
  • 2.启动和面程序,待面团光滑后,加入软化的黄油
  • 3.待能扯出稍具透明的大片薄膜后,面团收圆,盖上湿布,进行基础发酵
  • 4.待面团是原来的2.5倍大时,手指蘸面粉,在面团顶部戳个洞,不回缩不塌陷,发酵成功
  • 5.将面团取出,置于案上,排气后,称重,分成20等份,分别揉圆,盖上保鲜膜,松弛10分钟
  • 6.取松弛好的面团,按扁,擀成牛舌状
  • 7. 从上向下卷成卷儿
  • 8.其它的面团依次处理好,盖保鲜膜松弛10分钟
  • 9.松弛面团的同时,将蔓越莓干切碎
  • 10.取一个松弛好的面卷,擀成长条,将适量的蔓越莓干均匀地铺上面
  • 11.从下向上卷成卷,收口捏紧
  • 12.其它的面卷和蔓越莓干依次处理好,置于不粘烤盘内,蒙上保鲜膜,于温暖湿润处进行二次发酵
  • 13.待面团是原来是二倍大时,表面刷一层蛋液,烤箱开始预热,180度
  • 14.进预热好的烤箱中,180度,上下火,20分钟左右,表面均匀上色,如果颜色过深可加盖锡纸
  • 15.出炉后,晾架上晾凉后入袋中保存
  • 16.料很足,口感也很好
