低糖少油版绿豆糕
夏天到了,超级爱吃绿豆糕,但毕竟是高热量的东西,不可以多吃。所以这次我改做成低糖少油版的,吃起来没啥罪恶感,哈哈,一不小心就吃了好几块。这还是个懒人版,没有过筛,绿豆只要蒸到熟透,用擀面杖多压几次,口感还是不错的。夹馅加了红豆沙,所以一整块绿豆糕有绿豆的清香,蔓越莓的酸甜,还有红豆沙的甜香,口感丰富,吃起来一点也不腻。

Steps to make 低糖少油版绿豆糕

  • 1.脱皮绿豆加入清水浸泡8个小时,期间不断换水。
  • 2.浸泡好的绿豆用蒸烤箱蒸28分钟,直到绿豆熟透。
  • 3.把蒸好的绿豆倒入密封袋里面,用擀面杖将他们压成细腻的绿豆泥。
  • 4.绿豆泥倒入炒锅中,加入细砂糖、黄油和牛奶,小火加热,将他们炒匀。其实只是拌匀,因为没什么水分,并不需要怎么炒制。
  • 5.最后加入切碎的蔓越莓干,翻拌均匀。
  • 6.炒好的绿豆泥倒入大碗中稍微晾凉,同时准备好夹馅的红豆沙。
  • 7.接着来分绿豆泥和红豆沙。我绿豆泥30g一个,红豆沙10g一个,方子的量总共做了32个。
  • 8.取一个绿豆泥,滚圆之后压扁,包入红豆沙,再滚圆。手法和包月饼一样。
  • 9.全部处理好之后就来压模。这次我用的是50g法焙客月饼模。将绿豆糕稍微整形成椭圆形,放入月饼模中,轻轻压一下底部,翻转月饼模,竖着按压一下之后,慢慢推出。一个美美哒绿豆糕就做好了。
  • 10.绿豆糕放入冰箱冷藏之后口感更佳。
