红烧狮子头
红烧狮子头也叫四喜丸子,四喜丸子一般是由是个大肉丸组成,寓意福、禄、寿、喜四大喜事。常作用于喜宴和宴客的重头菜,四喜丸子做法与狮子头基本一致,都是以猪肉馅为主料,加上葱花和一些辅料炸成肉丸,再经过煮炖而成。

  • 淀粉10克
  • 鸡蛋1个
  • 猪肉350克(三肥七瘦)
  • 1茶匙
  • 老抽一匙
  • 料酒一匙
  • 一匙
  • 家乐浓汤宝半个(鸡汤口味)
  • 少许(焯油菜用)

Steps to make 红烧狮子头

  • 1.把猪肉和葱剁碎。
  • 2.把葱和肉混合一起剁成肉糜。
  • 3.把剁好的肉糜放入容器中,打入一个鸡蛋,再放入适量的姜粉和一茶匙盐搅拌至肉馅上劲儿。
  • 4.再加入淀粉继续搅拌至肉馅上劲儿。
  • 5.用手把肉馅团成肉丸。
  • 6.锅中放适量油烧热后下入肉丸。
  • 7.炸至肉丸表面金黄捞出备用。
  • 8.锅中添水、老抽、料酒、白糖和浓汤宝大火煮沸。
  • 9.放入炸好的肉丸,水量要在肉丸的2/3处,大火煮八分钟左右至肉丸熟透。
  • 10.继续大火收汁即可。
  • 11.锅中烧开水,把洗干净的油菜放入锅中,再放少许盐焯出摆放盘中,把狮子头盛放在上面即可食用。
