Steps to make Mango yam - a must-have for summer
- 1. Preparation: 1. Use half a basin of cold boiled water and water with yam; 2. Put half a pot of boiling water in a small milk pot, add a large handful of rock sugar and stir until melted. Let it cool and set aside.
- 2. Prepare yam during the period, and make sure to use hairy yam (as shown in the picture). The flesh is relatively tight, fair, and should not change color.
- 3. Peel the yam, process it into a chalk with a large head and a thickness of 6cm, soak it in water for later use (anti oxidation).
- 4. Bring enough water to a boil in a large pot, add yam and cook for about 5 minutes (try to make it thicker and more durable). When it is cooked and crispy, remove it and rinse with tap water. Finally, soak in cold boiled water for a few minutes to remove the sound, drain and set aside.
- 5. After processing the yam, the rock sugar water has almost cooled down. Add an appropriate amount of white vinegar in a ratio where the sour taste is better than the sweet taste. Put the yam in a sealed container, pour the prepared sour and sweet water, cover the yam, and refrigerate it for more than three hours. It is better to stay overnight.
- 6. When eating, pack yam into a plate, cut an appropriate amount of diced mango meat and add it. Dilute the mango sauce with rock sugar water soaked in yam (a little bit) and pour it over the mango. The cold, sour, and sweet mango yam has a rich taste and is drooling!
- 7. Using the same method, blueberry jam is diluted slightly with rock sugar water (a little bit) used to marinate yam, poured over yam, and immediately transformed into another elegant style of blueberry yam, truly worthy of the versatile yam king!
