最美家乡菜---【剁椒鱼头】
这一周的主题赛是湘菜啊,好歹俺也是正宗的湖南人,不捧捧场说不过去啊....
天气预报说要下大暴雨,早早的就买了菜回来,准备在家做好吃的,准备在家吃着好吃的,然后和儿子一起看海...
话说昨天的温度还是很高的,俺妈妈非常不理解这种大热天还在厨房倒腾的人,还举着相机,一个菜倒腾半个小时还没收工....不过,吃起来还是很给力的,这是俺妈妈在北京唯一的吃鱼方式哇,其它的做法的鱼,通通不吃....这个剁椒鱼头,能让妈妈吃两大碗米饭,嘿
俺这里的剁椒是从湖南老家背来的呢,有点油辣椒的感觉,而且超级辣......强烈推荐给嗜辣一族俺们郴州特产的【小徐瓜瓜】牌剁辣椒以及系列产品,非常好吃,尤其适合烹饪鱼类。

Steps to make 最美家乡菜---【剁椒鱼头】

  • 1.鱼头半个,收拾干净备用。
  • 2.鱼头加上盐、料酒,抹匀,腌制半个小时,然后冲洗干净,这一步非常去腥啊,蒸出来的鱼头一点腥味都米有了。
  • 3.蒜、姜、豆豉,切成碎末备用。
  • 4.将蒜末、姜末、豆豉、剁椒、蒸鱼豉油混合均匀。
  • 5.腌好的鱼头,冲洗干净,摆盘,可以在鱼头下面垫上2根葱段,姜片。
  • 6.将第四步中的辣椒均匀的抹在鱼头上,开水上锅蒸10分钟,最后撒上葱花,淋上少许热油即可。
