  • 1.准备好所需材料
  • 2.奶酪室温软化,和柠檬汁,淡奶油称重后一同放入食品料理机搅打至顺滑无颗料状态,倒入大碗里
  • 3.将蛋黄打散,倒入打好的奶酪里
  • 4.用打蛋器搅拌均匀
  • 5.把低筋面粉筛入蛋黄奶酪里
  • 6.用橡皮刮刀翻拌至完全融合后放入冰箱冷藏
  • 7.接下来就打蛋白,用电动打蛋器打至呈鱼泡状时加入1/3的细砂糖,再搅打至发白时加入1/3的糖,继续搅打至浓稠表面出现纹路时倒入剩余的细砂糖
  • 8.打至提起打蛋器能拉出一个尖角,顶端有个小弯曲就可以了,不要打到硬性发泡
  • 9.把乳酪糊从冰箱拿出来,加入1/3打发好的蛋白
  • 10.用橡皮刮刀上下翻拌均匀,注意不要打圈,以免蛋白消泡
  • 11.将拌好的蛋白乳酪糊全部倒回装有蛋白的碗里
  • 12.继续用同样的手法上下翻拌至完全混合,拌好的蛋糕糊应该是非常细腻浓稠的
  • 13.在模具外包上一层锡纸,防止用水浴法烘烤的时候进水,如果是固底模就不需要包锡纸
  • 14.将拌好的蛋糕糊倒入模具内
  • 15.在烤盘中注入3CM高的水
  • 16.放入烤箱中下层,烤箱预热后140度1小时左右
  • 17.烤好后的蛋糕待冷却后脱模,入冰箱冷藏4小时以上再食用
