酒糟封鱼,尤其是封带鱼,也是我们家乡的特产。

家乡面临东海,而东海的带鱼最好吃。

每年的深秋与初冬季节,就是带鱼大丰收的季节。

在春节前做上那么一坛,春节时,有客人来,拿出来一蒸,就是一盘美味。
酒糟是做米白酒的下角料,用酒糟封的带鱼,充满着酒香,非常下饭。吃着别有一番风味!

Steps to make 酒糟封带鱼

  • 1.带鱼去头尾,去肚,洗净
  • 2.切段,凉干水份
  • 3.准备好酒糟,盐,糖,鸡精,姜。
  • 4.加盐,糖,鸡精,把酒糟颁碎了混合匀。
  • 5.准备一个坛,洗净沥干。
  • 6.放一层带鱼
  • 7.放一层酒糟
  • 8.撒些姜丝
  • 9.就这样一层层的放好,压实了。
  • 10.最上面加些油
  • 11.把坛口封住,15天就可以吃了
  • 12.吃时,只需撒些葱花,隔水蒸10分钟左右即可。
