【酸汤金针肥牛】无法抗拒的酸辣诱惑
这道菜是我很喜欢的一道菜,汤色金黄清澈,口感酸辣但味道不失鲜美,肉吃起来一点也没有厚重味,里面的配角金针菇也极下饭,哪怕这个汤用来泡饭都是很美味的。如果喜欢更酸辣的味道,可以再加少许白醋和野山椒,更够味哦。

      我这里用的肥牛片是比较厚的那种,吃起来更有口感,不容易煮烂,喜欢薄的那种,购买时注意挑选一下即可,不管薄厚,味道都非常美,我都很喜欢。

     这个菜做起来不复杂,超级推荐没做过的大家尝试一下,保准不让你失望,而直呼过瘾。

  • 肥牛片300克
  • 金针菇1把
  • 海南黄灯笼辣椒酱3大匙
  • 野山椒末20克
  • 青尖椒2个
  • 生姜3片
  • 5瓣
  • 白胡椒粉少许
  • 1/2匙
  • 料酒1/2匙
  • 陈醋1/2匙
  • 高汤一碗
  • 鱼露1匙(约15ML)
  • 红尖椒2个

Steps to make 【酸汤金针肥牛】无法抗拒的酸辣诱惑

  • 1.准备材料,速冻肥牛片提前取出解冻。
  • 2.金针菇洗净,剪去根部,放入开水锅内氽烫2分钟后捞起。
  • 3.将金针菇铺在碗里备用。
  • 4.锅里烧热油,将切碎的葱末、姜末、蒜末、野山椒末放入锅内炒香。
  • 5.再加入黄辣椒酱翻炒出香味。
  • 6.加入高汤或清水,再加入陈醋、白胡椒粉、料酒、鱼露大火煮开。
  • 7.过滤掉汤里的料渣不用。
  • 8.将过滤后的汤倒回锅内,放入化冻后的肥牛片,煮至肥牛片由红转为白色即可。
  • 9.将煮好的肥牛片倒入盛放金针菇的碗内,撒上新鲜的小青红尖椒圈即成。
