黑芝麻餐包
早就想做这款小餐包了,黑芝麻既营养又健康,今天姑姑来,正好做完让她带回去吃。因为平时工作忙,还是利用冷藏发酵分两天完成。

方子依然来自君之,我稍稍作了改动,我所有的面包用的都是普通高粉和植物油,不同的方子出来的面包组织真的很不一样。之前做过君之的火腿面包卷,从此爱上了君之的方子。

  • 高粉250克
  • 160克
  • 酵母1小勺
  • 细砂糖50克
  • 1/2小勺
  • 全蛋30克
  • 植物油30克
  • 黑芝麻60克

Steps to make 黑芝麻餐包

  • 1.高粉250克,水160克,干酵母1小勺,细砂糖50克,盐1*2小勺,全蛋30克,植物油30克,炒熟的黑芝麻60克(黑芝麻平均分成两份,把30克用料理机打碎)
  • 2.除未研磨的30克黑芝麻外,把所有的原料按照先液体后固体的方式投入面包机揉至完成阶段
  • 3.最后把黑芝麻粒放进去,揉1分钟左右,使黑芝麻在面团里分布均匀
  • 4.发酵好的面团
  • 5.把发酵好的面团排气,分割成所需的份数滚圆,进行中间发酵15分钟
  • 6.包上比萨酱
  • 7.整形成梭子形
  • 8.把所有的生坯整理好放烤箱进行二次发酵
  • 9.发酵完成的生坯
  • 10.表面刷上全蛋液
  • 11.烤箱中层180度15-18分钟
