Steps to make 水煮肉片

  • 1.准备一块里脊肉,瘦的梅花肉也不错。
  • 2.把肉放在冰箱里冻一下稍硬,切薄片。
  • 3.肉片放料酒和淀粉,一点盐,抓匀备用。
  • 4.小油菜洗净切去根部,下开水里焯烫一分钟捞出沥干。
  • 5.焯好的小油菜铺在大碗底备用。
  • 6.线椒和小米椒切段备用。
  • 7.肉片下开水中焯烫一下,水再次开,肉变色即可捞出来,肉片薄熟的快,煮久了就会发柴。
  • 8.肉片沥干水放进铺好油菜的大碗里。
  • 9.撒上青红椒段。
  • 10.起锅热油爆香葱姜蒜,放两大勺郫县豆瓣酱炒出红油。
  • 11.加一碗水烧开。
  • 12.加一点糖。
  • 13.加一点盐,盖盖煮七八分钟。
  • 14.煮好的汤汁隔漏勺倒进大碗里,锅里的料渣正好被滤出去了。
  • 15.花椒和干辣椒段倒在碗中间。
  • 16.烧一点热油,烧到微微冒烟,倒在干辣椒段上。
  • 17.呲拉一声,香味儿出来了,水煮肉片做好啦!
