湘式辣鸡块
与川菜比起来还是很喜欢湘菜,喜欢那种湘式的辣——不干不燥,特别是湘式剁椒,透足了鲜香。

    Steps to make 湘式辣鸡块

    • 1.鸡翅根洗净,改刀成两块。
    • 2.焯水后洗净浮沫。
    • 3.香菇切片;青椒切碎。
    • 4.锅内热油,七成热下葱段、姜片和蒜末(大约需要五六瓣),爆香后,下入鸡块,调入料酒,加酱油、糖,翻炒均匀,使鸡块上色。
    • 5.下入剁椒(可根据各人嗜辣的程度来决定用量)。
    • 6.炒匀后,盛入空碗内,上蒸锅蒸二十分钟。
    • 7.将蒸好的鸡块重新倒入炒锅内,下入香菇,调入鸡精,大火尽量收干汤汁后,临起锅前下入青椒,炒匀即可。
