榨菜鲜肉酥
榨菜咸肉酥,咸香的肉馅被酥皮层层包裹,一口下去,鲜香口感,爱不释手!!!

  • 清水40g
  • 榨菜80g
  • 糖粉5g
  • 胡椒粉少许
  • 淀粉1勺
  • 料酒1勺
  • 酱油1勺

Steps to make 榨菜鲜肉酥

  • 1.准备食材。
  • 2.料酒、酱油、淀粉、胡椒粉与肉末混合均匀,腌制片刻。
  • 3.加入切碎的榨菜,混合均匀。
  • 4.分成8等份,捏成团后,放入冰箱冷冻1小时。
  • 5.所有的水油皮材料放入大碗里,揉成光滑的面团后,盖上保鲜膜静置松弛30分钟。
  • 6.油酥材放入碗中,用压拌的手法混合均匀。
  • 7.水油皮与油酥分别分割成8份,滚圆备用。
  • 8.水油皮面团稍微按扁,包入油酥,收口处捏紧。
  • 9.小面团依次擀成牛舌状,之上而下卷起后,盖上保鲜膜,静置松弛15分钟。
  • 10.包入内馅,收口处捏紧。
  • 11.印章蘸少量色素,在饼胚的表面做装饰。
  • 12.放入预热好的烤箱,上下火190度,中下层烘烤30分钟左右。为防止上色过重,烘烤中途可以加盖锡纸,烤好出炉即可食用。
