清明艾粄
客家人在清明节这一天都有吃清明粄的习俗,粤东地区湿气较重,当地人吃清明粄可以起到除湿有祛湿、暖胃等功效预防各种疾病的作用。

Steps to make 清明艾粄

  • 1.只用了两种青叶,艾叶、鸡矢藤。
  • 2.煮开一锅水,将青草焯下水,放入1克碱面,焯青叶的水不要倒,留着备用。
  • 3.焯软后,捞起青叶过凉水。
  • 4.青草拧干水份放入破壁机,倒入200克焯青叶的水,打成青汁。
  • 5.倒出青汁。
  • 6.倒入200克糖,搅拌均匀。
  • 7.准备糯米粉和粘米粉。
  • 8.两种粉倒入盆中。
  • 9.将青草汁倒入粉中。
  • 10.和成团。
  • 11.取约60克的面团,搓成圆形再按成饼状。
  • 12.入锅蒸。特地到蕉园里割了些蕉叶垫底,环保健康,还可增添香气。
  • 13.大火蒸20分钟,时间到出锅。
  • 14.软软糯糯,甜度适中,一口把春天吃进嘴里。
