奶酪蛋白曲奇(烤箱做饼干)
做葡萄奶酥只用了蛋黄,所以用剩下的蛋白做了这个,只用蛋白做出来的曲奇感觉更加酥脆,再加上奶酪,真滴奶味十足~

  • 玉米淀粉40克

Steps to make 奶酪蛋白曲奇(烤箱做饼干)

  • 1.准备好材料
  • 2.室温软化黄油和奶油奶酪至可以用手指戳动,先用电动打蛋器低速搅拌一下黄油和奶酪
  • 3.加入细砂糖、糖粉和盐,先用刮刀稍微搅拌一下,再用打蛋器打发,否则粉末会飞起来
  • 4.用电动打蛋器打发至颜色发白,体积膨胀
  • 5.再分次加入蛋白,每次都要等完全混合均匀再加入下一次,搅拌均匀
  • 6.筛入低筋面粉和玉米淀粉,用橡皮刮刀切拌均匀(不要多拌,拌到无干粉就可以了)
  • 7.搅拌好的面糊是有润润的,黏黏的
  • 8.将面糊装入裱花袋,挤在烤盘上(如果烤盘是普通烤盘的话,建议铺上一层油纸)
  • 9.烤箱上下火180度预热10分钟后,烘烤:上下火模式,190度烘烤25分钟(最后几分钟记得盯着点,曲奇很容易烤糊)
  • 10.超级酥的曲奇就出炉了(等稍微凉后就会酥脆的,如果还是有点软的话,回炉多烤一下)
