茄子豆角焖面
焖面,从焖的字义来看,“盖紧锅盖,用微火把饭菜煮熟。”焖面是把配菜翻炒至半生时码上湿面,盖上锅盖,细火焖至菜熟而且面条吸饱蔬菜的汤汁。今天用猪肉、茄子、豆角为配菜来做焖面,做好的面条筋韧,豆角脆嫩,茄子软烂,肉香味浓,非常好吃。

    Steps to make 茄子豆角焖面

    • 1.猪肉肥瘦分开切片,瘦肉用盐、料酒、生抽、水淀粉拌匀腌制10分钟。
    • 2.豇豆择去两端,切寸段,胡萝卜切丝,蒜瓣、火葱头清洗备用。
    • 3.茄子切小块,加盐搓软腌制一会,用水清洗后挤去水分。
    • 4.湿面条适量。
    • 5.肥肉放入锅中小火煸炒出油。
    • 6.放入瘦肉滑炒变色。
    • 7.放入蒜瓣、火葱头、胡萝卜翻炒。
    • 8.放入豇豆。
    • 9.放入茄子,加盐、料酒、生抽炒匀。
    • 10.加与食材齐平的水烧开,盛出一碗汤汁。
    • 11.面条平铺在蔬菜上,把汤汁浇在面条上,盖盖小火焖至菜熟。
    • 12.水分烧干,将面条炒匀。
    • 13.面条筋韧,豆角脆嫩,茄子软烂,肉香味浓,非常好吃。
