奶油蛋糕卷

  • 淡奶油350克
  • 黄油2525克
  • 清水55ml
  • 细砂糖蛋糕用65克
  • 细砂糖奶油用20克

Steps to make 奶油蛋糕卷

  • 1.蛋黄,蛋白分离,分别装入无油无水的容器中,蛋白中滴入几滴柠檬汁,加入65克糖,打发至湿性发泡。
  • 2.25克黄油加入55ml清水加热至黄油融化。
  • 3.晾凉后加入蛋黄筛入低筋面粉。
  • 4.用蛋抽搅打均匀,越均匀越好,搅打至无干粉。
  • 5.取三分之一的蛋白霜和蛋黄液翻拌均匀。
  • 6.将拌好的蛋糕糊倒入剩余的蛋白霜中,翻拌均匀。
  • 7.将拌好的蛋糕糊倒入不粘烤盘中(烤盘是28*28),轻轻的晃动几下,再用力震几下,震出大气泡。送入事先预热好的烤箱中层,上下火150度,40分钟。
  • 8.烤好后戴上隔热手套将烤盘取出,倒扣在烤架上,降温后脱模到油纸上。
  • 9.抹上打发好的淡奶油,中间多抹一点,上下两边尽量抹薄一些。
  • 10.借助擀面棍将蛋糕卷起,用油纸包好,放入冰箱冷藏定型30分钟。
  • 11.取出切开即可食用。
  • 12.蛋糕卷正卷反卷都可以的。
