枣泥蛋黄酥
在孔老师的美食汇上抢拍到1元的大红枣,收到一看又大又红,吃着很是甜,当即就想到要打泥,想做磅蛋糕家里又没有红糖了,刚好冰箱还有几只咸蛋,直接取出蛋黄做枣泥蛋黄酥好了,于是周末又有不一样的美食吃了。
红枣煮好再用破壁机一打就非常细腻了,不用放糖蛮甜的,这次是小包酥虽然麻烦一点,但享受的却是这个过程,最后的成品也是非常满意,层次丰富的酥皮、香甜细腻的枣泥、再加上咸香开胃的蛋黄,我一下子两个就下肚了,好吃

  • 红枣350G
  • 咸蛋6个
  • 玉米油100G
  • 白糖20G
  • 温水100G

Steps to make 枣泥蛋黄酥

  • 1.准备好所需要的材
  • 2.先把红枣洗好,泡20分钟,取出枣核
  • 3.奶锅放少量水,加入红枣煮10分钟
  • 4.把煮好的红枣倒入破壁机杯中
  • 5.开启机器把红枣打成泥
  • 6.细腻的枣泥馅就做好了
  • 7.做水油皮:把200G面粉、40G糖、100G水和40G油混合揉均成为水油皮面
  • 8.再做油酥:把120G面粉和60G油混合成为油酥
  • 9.松弛好的水油皮和油酥取出,都分成平均的16份
  • 10.取一个水油皮包放一枚油酥,包好压扁,用擀面杖擀开
  • 11.再顺势卷起
  • 12.全部做完这一步用保鲜膜包起来入冰箱松弛20分钟
  • 13.20分钟后拿出来,取一枚再擀开
  • 14.顺势再卷好
  • 15.做完全部仍放冰箱松弛20分钟
  • 16.再重复第13-15步一次,松弛好后取出擀平,中间放上枣泥蛋黄(咸蛋取出蛋黄切两半,用枣泥包住)
  • 17.包好收口成型
  • 18.依次做完排入烤盘,有的只包了枣泥
  • 19.刷蛋液,撒黑芝麻,入190度的烤箱,中层25分钟左右出炉即
  • 20.刚出炉的香酥可口非常好吃
