蕃莳庆糕
“蕃莳庆糕”绝对是台州的土特产。它是粗粮细做的典型代表。从名称上来说,蕃莳庆糕的叫法也颇为别致。黄岩话里蕃薯叫做蕃莳,糕是蒸制而成的,确切的叫法是“蕃莳蒸糕”,但台州的“蒸”、“庆”的读音几近相同。写作“蕃莳庆糕”,其中的“庆”字也带有喜庆的色彩,为大家欣然接受。“糕点味道香甜,适合于喜庆用的点心,也可以做为送给亲友的礼物等。
“蕃莳庆糕”,选取的原料主要是蕃薯切成丝晒干后磨成的粉,俗称“蕃薯丝粉”。在蕃薯丝粉中掺入一定量的糯米粉和红糖,拌匀后放入垫好屉布的蒸笼,撒上一些桂花和芝麻,再放在锅中蒸熟后,反扣在案板上即可。
蕃莳庆糕做法简单,不过如何把握好蕃薯丝粉与糯米粉间的比例则是要点。糯米粉放少了,则蕃莳庆糕糯性不够,显得过于硬邦邦;糯米粉放多了,则蕃薯庆糕有些粘牙,口感不好。只有比例恰当,才香糯可口。

    Steps to make 蕃莳庆糕

    • 1.番薯丝粉、糯米粉和红糖混合(比例没称,按自己对软糯的喜好把握)。
    • 2.混合好的粉类。
    • 3.这是专门蒸制的桶,家里做用蒸锅就可。
    • 4.垫上屉布,把拌好的粉倒到上面,铺平。
    • 5.上面撒上桂花和芝麻。
    • 6.用刀在上面划几下,这是便于蒸好后分块的,盖上盖子,大火烧开上汽后5分钟。
    • 7.蒸好的蕃莳庆糕倒扣在案板上。
    • 8.香、甜、糯,口感丰富。
    • 9.切块食用。
