【绿豆饼】——掉渣掉的一塌糊涂的酥
制作酥皮点心,好几年以来这是第三次,算是做的非常少的了。为啥呢,就是因为它酥。酥的掉渣,且掉的厉害,会弄得到处都是,所以我很少做也很少吃。

但是偶尔吃上一次,享受酥香的口感,也是很不错的啦~~



材料:
水油皮:中筋面粉67g,细砂糖10g,水34g,猪油10g
油酥皮:中筋面粉66g,猪油33g
绿豆馅儿144g

Steps to make 【绿豆饼】——掉渣掉的一塌糊涂的酥

  • 1.将水油皮材料一起倒入小盆中
  • 2.混匀后揉成面团
  • 3.分成12份盖好保鲜膜松弛30分钟
  • 4.将油酥皮材料倒入小盆中
  • 5.混匀揉成团
  • 6.分成12份
  • 7.把松弛好的水油皮面团压扁成圆形
  • 8.将油酥面团放到中间
  • 9.转圈捏褶包好
  • 10.收口朝下放置
  • 11.将所有的油酥面团都包入水油皮面团中
  • 12.取一个包好的面团,用擀面杖擀成椭圆形
  • 13.沿一头卷起
  • 14.依次将所有面团全都擀薄卷起
  • 15.取一个卷好的面团,擀成长条状
  • 16.卷起
  • 17.依次将所面团全都擀长条并卷起,静置15分钟
  • 18.取绿豆馅儿,分成12份
  • 19.取一个面团对折
  • 20.然后压扁
  • 21.用擀面杖擀成圆片状
  • 22.将绿豆馅儿放到中间
  • 23.包好
  • 24.收口朝下放置
  • 25.将包好的面团依次摆放入烤盘中,中间留出空隙
  • 26.将面团压扁成饼状
  • 27.送入预热好的烤箱中下层,200度30分钟,期间注意翻面
  • 28.出炉后晾凉即可食用
