小炒腊牛肉
腊牛肉是湖南吃货的另外一个最爱。在我儿子眼里,自从我做了小炒腊牛肉之后,腊肉第一的位置被无情的替代了。冷烟熏制的腊牛肉,表里一致,煮熟切成片,透明发亮,色泽鲜艳,黄里透红。加上大蒜,辣椒等小炒,口感咸香,是下饭的佳品。

  • 红尖椒100g
  • 大蒜3瓣
  • 生姜少许
  • 香菜少许
  • 生抽少许
  • 食用油少许

Steps to make 小炒腊牛肉

  • 1.将腊牛肉洗净,切成大块,放到锅里用冷水烧煮,煮大约8分钟;
  • 2.取出腊牛肉,将腊牛肉切成厚薄适宜,均匀的薄片。这是考验刀功的环节,看看我的刀功还不错吧;
  • 3.将红尖椒洗净,切成圈;大蒜和生姜切片,香菜切断,备好待用;
  • 4.热锅,倒入适量食用油,将大蒜,生姜倒入锅中爆炒片刻,然后将尖椒放入锅里一起翻炒约2分钟;
  • 5.倒入腊牛肉一起继续翻炒约2分钟;
  • 6.倒入少量冷水,待水开之后,淋上适量生抽,放入香菜,拌匀之后起锅装盘。
