【威海】威海特色熏鲅鱼
鲅鱼是本地比较常见的一种海鱼。其肉质细腻、味道鲜美、营养丰富。除鲜食外,还可加工制做罐头或咸干品。大连人对鲅鱼食用颇有创意,有久负盛名的系列知名小吃,如鲅鱼丸子、鲅鱼烩饼子、红烧鲅鱼等。尤其是鲅鱼氽丸汤,那真是丸香、汤鲜、味美的海鲜一绝,是老少皆宜的人间美食。与大连隔海相望的我们威海更是把鲅鱼的吃法发挥的淋漓尽致,鲅鱼饺子、鲅鱼包子、熏鲅鱼等等都是威海人创造的美食。此处的熏鱼和南方的熏鱼是两种完全不同的概念,湖南熏鱼一般是将鱼腌制好,挂在炉灶的上方,利用果皮,稻壳烧出来的烟熏鱼。而威海的熏鱼是将鱼腌制后先炸,再在料汁中浸泡。操作方法完全不一样。今天就跟着我来了解一下熏鲅鱼的做法吧!也许我的做法不是最地道,但它确实是最家常最美味的。

  • 桂皮1块
  • 香叶4片
  • 花椒3g
  • 干辣椒2只
  • 陈皮1块
  • 冰糖20g
  • 大葱半根
  • 生姜1块
  • 老抽2勺
  • 生抽1勺

Steps to make 【威海】威海特色熏鲅鱼

  • 1.鲅鱼从冷冻室取出,不要等到完全解冻,能下刀的时候切成厚片。如果是新鲜的鲅鱼可放在冰箱里冷冻两个小时再切片。
  • 2.切好片之后再将肠肚清理干净。这样先切后洗的步骤鲅鱼可以保留完整的形状。
  • 3.用厨房纸巾吸干水分。
  • 4.放入大葱,生姜和胡椒粉腌制半个小时。
  • 5.五香水需要准备的材料有:大葱,生姜,八角,桂皮,香叶,干辣椒,花椒,冰糖,陈皮。
  • 6.将所有的香料放入锅内,干锅炒出香味。
  • 7.一次性添加足量的清水。
  • 8.调入料酒,冰糖。
  • 9.加入老抽,生抽,大火烧开以后转小火煮二十分钟。
  • 10.将腌好的鲅鱼放在油锅中炸至金黄。
  • 11.将煮好的五香水过滤,炸好的鲅鱼在香料水中浸泡一下。
  • 12.装盘。
  • 13.很香,非常下饭。
