Steps to make 手撕大面包

  • 1.准备中种的食材
  • 2.把食材混合后揉匀后盖上保鲜膜放入冰箱冷藏17小时
  • 3.打开里面呈现是蜂窝状
  • 4.主面团准备,30克黄油里分出10克黄油隔热水溶化
  • 5.面包桶内加入全蛋液,白糖,盐,中种面团撕成小块加入再把面粉和酵母粉加入
  • 6.和面15分钟后加入黄油继续按和面20分钟
  • 7.至出手套膜盖上按发酵程序
  • 8.发酵至2倍大
  • 9.取出排气分成5等份后盖上保鲜膜静置20分钟
  • 10.擀成圆皮
  • 11.取一片圆皮刷上黄油
  • 12.再用一片叠加上去反复做法至全部做好
  • 13.分成16等分(先分成米字形再分)
  • 14.卷起
  • 15.放入8寸模具内
  • 16.ACA烤箱调制发酵,用了50分钟,模具下面放一碗热水
  • 17.发酵至2倍大刷上蛋液撒上白芝麻(烤箱170度预热)
  • 18.放入预热好的烤箱里,倒数第二次,上下火170度,30分钟即可
