Steps to make 酸菜鱼

  • 1.草鱼批成薄片用料酒、胡椒粉、盐勾芡后抓匀腌制20分钟
  • 2.青红椒切端,姜蒜切片
  • 3.酸菜、花椒准备好
  • 4.锅放少许油,将酸菜炒制一会,加入姜和蒜片,再加入开水煮沸
  • 5.滤汁后倒入备好大碗中,再将花椒、干椒爆香后加入
  • 6.将滤过的汤汁烧开,加入腌制好的鱼片划散,煮上1到2分钟
  • 7.倒入大碗,再起锅熬油,将滚条的油浇在鱼片上,吱吱声响,香味升腾
  • 8.最后撒上点葱花,上桌。
