杏仁蜂蜜戚风蛋糕

  • 杏仁片20克
  • 蛋黄60克
  • 细砂糖60克
  • 蜂蜜45克
  • 1/4小匙
  • 玉米油35克
  • 牛奶45克
  • 低粉90克
  • 蛋白135克
  • 柠檬汁少许

Steps to make 杏仁蜂蜜戚风蛋糕

  • 1.杏仁片预先烤熟。
  • 2.铺在烤模底部备用。(我用的屋诺18cm戚风中空模)
  • 3.蛋黄分别加入细砂糖10克,蜂蜜及盐。
  • 4.用打蛋器搅拌均匀后加入玉米油和牛奶。
  • 5.继续拌匀后筛入低粉,用打蛋器以不规则的方向拌成均匀的面糊,蛋黄糊就做好了。
  • 6.蛋白用电打蛋器搅打呈粗泡状,分三次加入60克的细砂糖,以快速方法搅打成呈小弯勾的九分发状态。
  • 7.取约1/3的蛋白加入蛋黄糊内,用刮刀轻轻拌和。
  • 8.再将拌好的面糊加入到剩余的蛋白里。
  • 9.用刮刀轻轻地底部刮起拌匀。
  • 10.将面糊刮入模具内,将表面稍微抹平,震去大气泡。
  • 11.放入预热的烤箱内,170度40分钟左右。
  • 12.取出后摔两下,倒扣,放凉,脱模即可。
