  • 1.准备好扒皮鱼,洗净抹干水分。
  • 2.每一面横切三道,便于入味。
  • 3.两面都抹上一些盐和胡椒粉。
  • 4.静置15分钟。
  • 5.锅内放油,放入2片姜。
  • 6.姜变色发黄,放入扒皮鱼。小火慢慢煎,煎至两面金黄。
  • 7.将白糖两勺,醋2勺,生抽2勺,老抽半勺,料酒2勺,胡椒粉适量,加少许清水调成汁。
  • 8.倒入料汁,放入两个干红辣椒。
  • 9.大火煮开,改小火,盖上盖子闷5-10分钟。
  • 10.翻面,再闷5分钟。大火收汁,放葱花。
