酸辣粉起源于四川[1],是四川省、重庆市、贵州省等地的传统特色小吃,属于渝菜、川菜、贵州小吃。其特点是麻、辣、鲜、香、酸且油而不腻。 酸辣粉主粉由红薯,红苕,豌豆按比例调和,然后由农家用传统手工漏制而成。酸辣粉源于西南民间,取食材至当地手工制作的红薯粉,味以突出酸辣为主而得名。

Steps to make 【四川】酸辣粉

  • 1.黄豆提前2小时以上浸泡后沥干水分,用油炸至金黄色
  • 2.炸好黄豆捞出洒上适量盐,放凉,酥豆子就做好了
  • 3.红薯粉皮清洗一下
  • 4.碎米芽菜炒一下
  • 5.葱姜切末
  • 6.香菜切段
  • 7.所有调料放一起加少许盐拌匀
  • 8.加入葱姜末
  • 9.水烧开后加入红薯粉,加筷子不断挑开,煮3-5分钟
  • 10.煮好把粉条捞到料汁里,再倒入点煮红薯粉的水,放入香菜、酥豆子就好了
