Steps to make 轻乳酪蛋糕

  • 1.没有出门买奶油奶酪 于是用牛奶500ml 放到锅里小火煮到冒小泡 加点盐 之后倒上白醋
  • 2.静置半小时后成了豆腐脑状
  • 3.在纱布上过滤半天 奶油奶酪就做好了 放点淡奶油会更浓稠 牛奶一定要加热 否则遇酸不凝结
  • 4.做好的奶油奶酪分次将剩余的150ml牛奶加入 搅打顺滑
  • 5.搅好的样子
  • 6.加入油 搅匀
  • 7.三个鸡蛋
  • 8.用勺子舀一个蛋黄 然后蛋清就会自己转下来
  • 9.蛋黄分三次一个一个的加入 搅匀
  • 10.筛入低粉
  • 11.筛入玉米淀粉
  • 12.搅至无明显颗粒 成为浓稠的面糊
  • 13.先倒1/3的糖在蛋清里
  • 14.低速打到大粗泡的时候再放糖一次
  • 15.打到稍微浓稠时再放剩下的糖
  • 16.打到湿性发泡 提起打蛋器有小尖尖
  • 17.1/3的蛋白霜加进面糊 翻拌均匀
  • 18.再倒回蛋白霜里 翻拌均匀 一定不要搅
  • 19.模具下面包锡纸 倒入模具中 烤盘盛水 170度预热 150度烤40分钟后 转170度烤20分钟上色 如果怕上色太重 上面盖层锡纸
  • 20.烤好的样子 锡纸粘住了表层一点 破坏了
  • 21.切开的样子 还不错吧?
