Steps to make 肉松蛋糕卷

  • 1.准备好所有材料 称重备用 香肠切丁 葱切碎
  • 2.蛋清蛋黄分离在干净的盆里 蛋黄中加入糖粉轻轻打散
  • 3.加入水 混合均匀
  • 4.分次加入玉米油 混合均匀
  • 5.低粉两次过筛加入蛋黄中
  • 6.翻拌均匀 静置待用
  • 7.蛋清中加入少许柠檬汁 (小夏加了2.5g)
  • 8.电动打蛋器低速将蛋白打到鱼眼泡状 加入1/3砂糖
  • 9.转中高速继续打至乳白状 加入剩下的1/2砂糖
  • 10.打至有明显纹路出现 加入最后的砂糖
  • 11.继续中高速打至提起打蛋器可看到弯的尖角即可
  • 12.取1/3蛋清加入蛋黄 翻拌均匀
  • 13.再取剩下的1/2蛋白 加入蛋黄糊 拌匀
  • 14.拌好的蛋黄糊加入剩下的蛋白盆中 拌匀
  • 15. 完全拌匀 倒入模具 振几下 排出大气泡 (模具28x28方盘)
  • 16.均匀的撒上香肠丁 香葱碎 白芝麻
  • 17.放入预热烤箱中层 180° 20分钟
  • 18.取出蛋糕放烤架上晾凉
  • 19.蛋糕晾凉后 快速翻铺到另一张干净的油纸上 撕掉表面油纸
  • 20.抹一些沙拉酱 撒些肉松
  • 21.将蛋糕卷起
  • 22.用油纸包好 放入冰箱冷藏1小时以上
  • 23.蛋糕切块 两边抹上沙拉酱沾上肉松
  • 24.甜咸香软 口感细腻
