  • 土豆淀粉50克
  • 食用油200毫升
  • 白醋2勺
  • 白糖1勺
  • 老抽1勺

Steps to make 锅包肉

  • 1.猪精肉切成2毫米后4至5厘米见方的薄片(你也可以用猪里脊肉)。
  • 2.将肉片装入盆中加入食盐和料酒腌制半小时后,再加入土豆淀粉(它的粘性比较强)。
  • 3.倒适量清水抓拌均匀使每一块肉片都裹上厚厚的淀粉糊。
  • 4.准备香菜段,胡萝卜丝和葱丝。
  • 5.准备蒜片、姜丝和葱段。
  • 6.起锅烧油。
  • 7.油温五成热下入肉片炸制(一次放两三片防止互相粘连)。
  • 8.炸至两面金黄捞出。
  • 9.锅中留底油炒香葱段姜丝和蒜片。
  • 10.倒入2勺白醋。
  • 11.1勺白糖。
  • 12.1勺老抽。
  • 13.炒出糖醋汁。
  • 14.倒入炸好的锅包肉快速翻炒,再加入葱丝、胡萝卜丝翻炒均匀。
  • 15.临出锅时撒上香菜段翻炒几下。
