Steps to make 蒜蓉扇贝

  • 1.首先是海鲜市场挑选新鲜扇贝,个头大小相近,肉质肥厚鲜活的即可!
  • 2.将选好的扇贝去掉另一半的贝壳,清洗掉泥沙,去掉黑色部分的内脏,再次用清水冲洗,加少许盐巴泡四五分钟
  • 3.清洗干净后沥水,为了方便食用,建议用刀子分离贝肉
  • 4.粉丝温水泡10分钟左右,这个时候也正好制作蒜蓉酱料
  • 5.锅里少许油,7成热,倒入注备好的蒜泥炒香,加入一小勺耗油,半小勺XO酱,少许味极鲜酱油、鸡精,差不多炒制两分钟左右
  • 6.将准备好的扇贝放入合适的餐盘,依次放上粉丝,再在粉丝上面放上一勺蒜蓉酱料,上锅蒸10分钟
  • 7.起锅后,在每个扇贝上撒上一点小米椒和葱花做点缀,也是增加更丰富的口感
  • 8.然后在每一个扇贝上淋上三四滴蒸鱼鼓油
  • 9.最后烧热油,冒烟那种,每个扇贝浇上一小勺
  • 10.成品。
