淡奶油蔓越莓蛋糕
一款奶香十足的蛋糕。小瑶的方子,我没将名字做任何修改,只是将造型改变了下,部分食材略有差异。更适合俺家的2个小宝食用。磅蛋糕的口感,快速消耗淡奶油的好方法。

  • 糖粉(淡奶油中)60g
  • 糖粉(蛋白中)60g

Steps to make 淡奶油蔓越莓蛋糕

  • 1.首先准备蔓越莓干,将蔓越莓干切碎。原方是80g蔓越莓,但是这个添加的干果,多少不会影响成品的成败。所以,我家里只有65g了,就放了65g,不过,事实上可能还不到,因为,在切的时候,俺家老二一直在偷吃。
  • 2.在蔓越莓中加入少量低粉(不计入食材明细中),让蔓越莓干裹上一层薄薄的低粉。
  • 3.淡奶油加入60g糖,打至如图成图,8,9分发。
  • 4.打发好的淡奶油中,分次加入2个蛋黄,搅拌均匀。
  • 5.淡奶油糊中,放一点盐,筛入低粉。搅拌均匀备用。
  • 6.蛋白中,滴入少许白醋,分3次加入糖,打发至如图有小弯钩状态。
  • 7.将打发的蛋白用上下翻拌法拌入淡奶油面糊中,搅拌均匀之后,再拌入蔓越莓干,拌匀。
  • 8.倒入模具。烤箱180度预热。
  • 9.烤箱内测温度180度,中下层25分钟。
