芒果千层小蛋糕
做了小杯装的千层芒果,还加了镜面,突然觉得像慕斯了,味道一样是杆杆滴

  • 蛋皮:鸡蛋(中等大小)1个
  • 蛋皮:牛奶250ML
  • 蛋皮:黄油15克
  • 蛋皮:低粉90克
  • 蛋皮:细砂糖20克
  • 馅:奶油300ml
  • 馅:芒果泥150克
  • 馅:细砂糖30克
  • 镜面:吉利丁片6克
  • 镜面:芒果泥140克
  • 镜面:白开水160克
  • 镜面:细砂糖30克

Steps to make 芒果千层小蛋糕

  • 1.先制作蛋皮:先将蛋皮中的黄油隔热水融化
  • 2.鸡蛋加糖打散均匀
  • 3.加入牛奶搅拌匀
  • 4.筛入面粉,拌匀
  • 5.再加入融化好的黄油液,搅拌均匀
  • 6.面糊过筛,(如果筛子底部有面粉颗粒,克用刮刀压散筛入面糊中拌匀后再过一次筛)
  • 7.锅底只抹少许油,倒入一勺面糊,转动煎锅使面糊均匀摊开,小火剪至面糊变色即可撕下来,抹油继续剪下一张
  • 8.取合适的磨具裁出与盛放模具稍小一圈的蛋皮,蛋皮的工作就好了
  • 9.下面做芒果奶油馅:取150克芒果果肉,用料理机打成泥
  • 10.奶油倒在无油无水的容器,加细砂糖用打蛋器打至硬性发泡
  • 11.在打发好的奶油里倒入芒果泥,打蛋器稍微打匀即可
  • 12.这是打好的芒果奶油馅,把奶油馅装进裱花袋备用,裱花嘴随意
  • 13.现在开始组装:先放一张裁好的蛋皮,再挤上一层芒果奶油,再放蛋皮,重复此动作至容器的8分满,然后盖上盖子或封上保鲜膜先进冰箱冷藏
  • 14.最后一步是做芒果镜面
  • 15.吉利丁片加少许水泡发后,隔热水融化
  • 16.芒果泥加水、糖,小火加热搅拌至糖溶化,倒入吉利丁溶液拌匀后关火,冷却至常温
  • 17.取出芒果千层,把芒果镜面淋在芒果千层上,至镜面刚好覆盖过表面的蛋皮,盖盖重新入冰箱冷藏30分钟至镜面凝固
  • 18.食用时装上适量的芒果丁,用巧克力装饰即可
  • 19.福字是我画出来不是写出来的,先把黑巧隔热融化装裱花袋,裱花袋剪小口,在转印纸上画出福字的背面,干了之后淋少许融化的白巧克力液,用刮刀稍微压开,完全干了就可以取下来了,反过来就是一面光滑的福字
