轻乳酪蛋糕
买了一次徹司叔叔的蛋糕,扔了一大半,不知为何吃不下去,吃的感觉腻。自己动手来做吧!我也是用了别人的配方,我学烘焙时间太短,一切都是按别人的配方来做的,不过我已经很满足了,因为对于一个连速冻饺子都煮不好的人,我的进步我也很骄傲呢!呵呵!

  • 奶油奶酪133G
  • 淡奶油40G
  • 细砂糖67G
  • 玉米淀 粉15G
  • 低粉15G
  • 蛋黄4个
  • 蛋白3个
  • 柠檬汁几滴

Steps to make 轻乳酪蛋糕

  • 1.准备好各种材料 。
  • 2.奶油奶酪、牛奶及淡奶油混合。
  • 3.隔热水用勺子将奶酪压碎,并用手动打蛋器划十字帮助搅拌均匀,无颗粒。
  • 4.分次加入蛋黄,一个搅拌均匀后再加入下一个。
  • 5.蛋黄完全溶入的状态,加入过筛后混和的低粉及玉米淀粉。
  • 6.蛋白加入柠檬汁后打成湿性发泡(弯钩状即可)。
  • 7.取适量蛋白加入蛋黄糊中,从下往上翻拌。均匀后倒入剩余蛋白中,再翻拌均匀。倒入模具中,
  • 8.烤箱预热175度,烤盘中加入一半的温水,采用坐浴法,将模具用锡纸包住,放入烤盘中,中下层60分钟。
  • 9.蛋糕上色后,加盖锡纸,温度调至150度即可。
  • 10.完成后,表面刷一层蜂蜜水。
