清凉爽口的麻酱凉面
北京人爱吃芝麻酱,原本习以为常,也不知道从什么时候起就成了全中国都知道的饮食习惯,这才意识到,果真是爱吃麻酱。除了著名的涮羊肉、芝麻烧饼、卤煮、红糖火烧,好多小吃也都有麻酱的身影。

瞧咱这碗芝麻酱凉面,就是以麻酱为拌料。外人可能想象不出这碗麻酱凉面的滋味和乐趣,想着粘粘乎乎、干不拉叽有啥可吃的。

但其实不然,想要这碗面条水水灵灵、凉嗖嗖、爽爽利利,还是有些小窍门儿的。比如,面条一定要过几遍凉水,根根爽利顺溜;麻酱不能太浓稠,也不能太稀,太稠面条粘,糊(一声)嘴,太稀挂不住面条,不香;黄瓜丝和大蒜末是标配。记住这几点,这面条想不好吃都难了!

至于现炸的辣椒油、开胃的米醋,都随个人口味添加。

Steps to make 清凉爽口的麻酱凉面

  • 1.芝麻酱入碗中,逐量加凉开水或者纯净水澥开,稠度如原味酸奶,再加适量盐搅拌融化。
  • 2.黄瓜切细丝,大蒜剁成末;黄瓜的品种有很多,我这次用的是外皮颜色浅、瓜体粗大汁水多的品种,外皮较粗硬,刮皮后使用。
  • 3.面条品种不限,粗细均可,原味或者杂粮亦无妨。
  • 4.水开后将面条入锅,煮至无白芯捞出。
  • 5.过凉水2-3遍,面条又凉又爽利。
  • 6.捞适量面条入碗,淋上芝麻酱,撒上黄瓜丝、蒜末,边吃边拌,清凉爽口,还可淋少许米醋,更具风味。
  • 7.麻酱凉面,清爽可口,营养健康又美味!
