冰糖红烧肘子

Steps to make 冰糖红烧肘子

  • 1.1、将肘子放在开水中煮,一边煮一边将浮沫捞出,直到不再出浮沫为止。将煮好的肘子捞出,用厨房用纸洗干净水(洗干净水是为了防止接下来炒糖色的时候太溅油)
  • 2.用刀将肘子从侧面切开一个口,切至肘子中间的骨头,沿着骨头切一圈,将骨头剔下来。同时在肉比较厚的部位用刀子划几下,方便入味,但是不要切破肘子皮。
  • 3.炒锅中放底油,放十几粒冰糖,开小火加热
  • 4.加热至冰糖全部融化,并且糖色变成棕色,同时边缘冒小泡泡
  • 5.把握好这个时机,立即将肘子皮朝下放入锅中,用铲子翻一翻,是肘子的各个面都沾上糖色(注意可能会比较容易溅油,可以拿锅盖挡一下)。接下来倒入料酒、生抽、老抽、葱姜蒜翻炒一下。
  • 6.倒入没过肘子的水,再加入盐、鸡精、五香粉调味(汤汁的味道要稍微比正常口味咸一点)
  • 7.一边转大火将汤汁烧开,一边加入花椒、八角、草果、桂皮、香叶、小茴香、干辣椒等炖料。
  • 8.转电炖锅炖煮3-4小时
  • 9.上桌之前取适量汤汁倒入炒锅中,小火加入少量水淀粉勾芡,浇在肘子上即可。
