自制放心油条

Steps to make 自制放心油条

  • 1.酵母用35度温水化开,静置一会,让它充分活化
  • 2.在面粉中加入白糖和泡打粉,搅拌均匀(白糖有助发酵的效果)
  • 3.将酵母水倒入面粉中,尽量搅拌匀
  • 4.往面粉中加温水,一点一点加,一边加一边搅拌,成雪花状就可以了,比平常包包子的面略软一些
  • 5.用力将面团揉至表面光滑(大概需要15-20分钟)
  • 6.用保鲜膜覆上,将面盆放至温暖处发酵2-3小时
  • 7.当面团是原来体积的2倍大,有很密的蜂窝组织,面就算发好了
  • 8.将发好的面取出,碗中放少许盐和碱化开
  • 9.将化开的盐碱水一点点加进发好的面团,一边加一边揉匀
  • 10.面团再次揉好后,用保鲜膜包好,等它再次发酵(做到这一步,我就把它放冰箱冷藏,到第二天早上拿出来稍微醒一下就可以炸了)
  • 11.案板上刷油,取出发好的面,分成小块,用手按成厚面片,这时面团非常湿软,为防止粘手,可以往手上抹些油,或者往面上少刷些油
  • 12.将面片切成大小均匀的面棒
  • 13.将小面棒用手压扁
  • 14.将压好的面片两两叠加,叠好后用筷子或者刀背从中间按压下去,将两个面片粘在一起
  • 15.这时油条生胚就做好了
  • 16.锅中放油烧至8、9成热,将油条生胚放进去炸至两面金黄(油温一定要高,将油条生胚放进去,可以立即浮起)
